Launching similar programs in separate windows (W2K)

hi,
i'm wondering how do you launch similar programs in separate windows? for example, i have 3 Excel files. when i double click the files to launch them, all of the files, end up in one single window. how do i make it to launch in 3 separate windows? i want every file to have an independent window. please help!!!
