Securing Folders On Win 2000 server (W2K)

I want to create a shared folder on a file server that will have multiple child folders. I do not want the domain users to have the ability to delete these folders, but I would like to allow them the ability to create their own files and folders and delete their own files and folders.

What permissions should I be setting?

Give (allow) them create and delete permissions in that folder, but deny the delete permissions for those folders you don't want them to be able to delete.
Deny permission is always stronger then Allow.
