User Accounts (W2K)

I am currently setting up Win 2000 for use by my family. I am attempting to set up several user accounts, but can't seem to get the restrictions on them that I would like:

I want to remove the settings and search bars from the Start Menu.

I want to restrict the files they can look at to just their 'my documents folder'. Currently they can browse the whole system.

Any help greatly appreciated
