Hi Simon,
Tested this out on XP Pro
Drill down to
HKEY_CLASSES_ROOT\*\shellex\ContextMenuHandlers\Op en With
removing the (Default) value data {09799AFB-AD67-11d1-ABCD-00C04FC30936} will remove the Open With option from the context menu.
This will apply to known and unknown file types.
