I just went back to Win2K Pro from WinXP Pro. In WinXP I had my Zip drive set to drive letter B. For some reason B is not showing as an option under Disk Management when I try and change the drive letter. B is listed in My Computer but it isn't available under Disk Management. Any suggestions on how I can get this to work?

You don't say but I presume the Zip drive is an internal ATAPI/IDE drive. If so, it normally is assigned a drive letter either between the last IDE hard drive partition and the CD or after the CD. I've never seen a BIOS that would allow A and B to be anything other than a combination of 3.5"/5.25" floppy drives. The LS120 is a different thing, never seen one, apparently not too popular in some areas.
